顶空固相微萃取气相色谱质谱法分析花牛苹果中的香气成分 被引量:15

Determination of aroma components of the apple cultivar Malus pumila′Huaniu′by HS-SPME coupled with GC-MS

摘要 用顶空固相微萃取(head-space solid-phase microextractions, HS-SPME)和气相色谱质谱(gas chromatgraphy mass spectrometrometry,GC-MS)联用技术对花牛苹果的香气成分进行了分析,共分离鉴定出了76种化学成分,其中酯类36种.占峰面积的45.71%;醇类13种,占峰面积的19.08%;醛类3种,占峰面积的9.62%;烯烃类3种,占峰面积的2.59%;其它物质占峰面积的12%,主要为酮类和烷烃类物质.选用OV-1701色谱柱、75μm CAR/PDMS萃取头,在萃取热平衡吸附时间25min,温度40℃,解吸附时间3min的试验条件下,得到的试验色谱峰保留时间和归一化面积的变异系数分别为0.08%~0.16%和2.72%~12.66%,且重复性良好. Aroma components in the fruits of the apple cultivar Malus pumila'Huaniu'were determined and analyzed by headspace solid-phase microextraction (HS-SPME) coupled with gas chromatography/ mass spectrometry(GC/MS)method. 76 kinds of chemical constituents were isolated and identified,including 36 kinds of lipid accounting for 45.71 % of peak area, 13 kinds of alcohols accounting for 19.08 % ,3 kinds of aldehydes accounting for 9.62 % ,3 kinds of alkenes accounting for 2.59 % ,and all the other volatile components accounting for 12 0%, such as ketones,alkanes and so on. The variation coefficients of retention time 12.66 under the of chlotoacetates and mormalized area were determined as 0. 08 % -0. 16 % and 2. 72% respectively, by using following experiment OV-1701 chromatographic column conditions, equilibrium adsorption and 75 μm CAR/PDMS extraction fiber time 25 min,temperature 40 ℃ and desorption time 3 min. The repeatability of the experiment was good.
