摘要 综述了功能性醋酸饮料的保健功能及其生产工艺和调配工艺。特别介绍了现代生物技术在功能性醋酸饮料生产中的应用研究现状,并展望了醋酸饮料广阔的开发前景。 The healthcare effects of functional vinegar drinks are summarized, and their production and formulation technologies introduced. The status quo of researches on the application of modem biotechnology in the production of vinegar drinks is focused upon, and their bright development prospects predicted.
