摘要
综述了多种生产壳聚糖的发酵方法,甲壳素脱乙酰以及壳聚糖的提取方法,分析了壳聚糖的开发利用现状。
The development situations of the production of Chitosan by various fermentation methods were introduced. And deacetylation of chitin as well as methods of extracting chitosan were reviewed. Present situation and perspectives of chitosan were discussed.
