摘要
对瓦氏黄颡鱼胃、前肠及肝胰脏的3种主要消化酶(蛋白酶、脂肪酶和淀粉酶)活力进行了初步研究。结果表明:胃、前肠和肝胰脏蛋白酶的最适pH分别为2.30、8.50和8.90,脂肪酶的最适pH分别为8.0、7.6和7.9,淀粉酶的最适pH分别为7.2、7.9和7.6。同时研究了在最适pH条件下,不同反应温度对3种主要消化酶活性的影响。结果表明:胃、前肠和肝胰脏蛋白酶的最适反应温度分别为50℃、50℃和65℃,脂肪酶的最适反应温度分别为45℃、50℃和35℃,淀粉酶的最适反应温度分别为30℃、30℃和35℃。在一定的温度范围内,3种消化酶的活力均呈先升后降的趋势。在最适反应温度与最适pH条件下,瓦氏黄颡鱼蛋白酶与淀粉酶的活力分布均呈现:前肠>肝胰脏>胃;脂肪酶的活力强弱为:前肠>胃>肝胰脏。
A primary study was conducted to study the activities of three main digestive enzymes (protease, lipase and amylase) in stomach, foreintestine and hepatopancreas of Pelteobagrus vachelli Richardson. The results show that the optimum pH of protease in stomach, foreintestine and hepatopancreas is 2.30, 8.50 and 8.90 respectively; while the optimum pH of lipase is 8.0, 7.6 and 7.9; and amylase is 7.2, 7.9 and 7.6. And the study of the optimum temperature of three digestive enzyme shows that: the optimum temperature of protease in stomach, foreintestine and hepatopancreas is 50℃, 50 ℃ and 65 ℃ respectively ; while the optimum temperature of lipase is 45℃, 50 ℃ and 35 ℃ ; and amylase is 30 ℃, 30 ℃ and 35 ℃. The activity of the three enzyme rises at first and then decreases within certain range of temperature. Under the most optimum pH and temperature conditions, both the activity distribution of protease and amylase is foreintestine 〉 hepatopancreas 〉 stomach ; while the activity distribution of lipase is foreintestine 〉 stomach 〉 hepatopancreas.
