食品中金黄色葡萄球菌污染状况研究 被引量:96

Analysis on the Contamination of Staphylococcus Aureus in Food

摘要 对采集的生牛乳、生鲜肉(猪肉、牛肉、羊肉、鸡肉)、肉制品、水产品、速冻食品、果蔬、豆制品等510份样品进行金黄色葡萄球菌的分离与鉴定,为金黄色葡萄球菌引起的食物中毒的监测以及追踪污染源提供依据。共检出被金黄色葡萄球菌污染的食品108份,总检出率为21.2%,且各类样品的受污染程度存在明显差异。 Isolation and identification of Staphylococcus aureus from 510 samples of food that collected from the raw milk. raw meat (pork. beef. mutton, chicken), meat products, aquatic products, frozen food. fruits and vegetables. bean products. This paper investigated distributing situation of Staphylococcus aureus in food for the supervision of Staphylococcus aureus, the examination of explosion and spread as well as tracking to polluter to providing basis. The detection of Staphylococcus aureus in samples is 108. The total detectable rate of staphylococcus aureus is 21.2%. The pollution level of Staphylococcus aureus is significant difference in each sample.
