保健黄酒抗氧化活性及其中酚类物质的比较 被引量:25

摘要 以总抗氧化能力、还原能力、清除DPPH自由基能力为指标,研究比较了3种保健黄酒的抗氧化活性,并测定了黄酒中多酚类物质的含量。结果表明,3种黄酒均具有明显的抗氧化活性,其中以糯米酒最强,佛手酒最弱。利用HPLC鉴定出黄酒中含有10种酚类物质,其含量与黄酒的抗氧化能力呈正相关性,本实验结果不仅为研究黄酒的保健功能奠定基础,也为保健黄酒的生产提供了一定的指导。 The antioxidant activity of three rice wines was determined and compared in terms of total antioxidant, deoxygenization capacity, free radical DPPH scavenging, and phenols contents. Results indicated that three rice wines all exhibited significantly antioxidant activity. The sticky rice wine had highest antioxidant activity while the chayote rice wine had lowest. Ten phenols in the rice wines were identified by HPLC. The phenols contents were correlated to the antioxidant activity office wines. The results not only established the foundation for the healthy research office wine, but also provided the guidance for healthy rice wine production.
