保加利亚乳杆菌高密度培养的初步研究 被引量:16

摘要 对培养保加利亚乳杆菌的基础培养基进行优选,确定为基础MRS培养基。然后优化培养条件:发酵时间为12h,起始pH为6.4,发酵温度为37℃。培养基:MRS培养基+7.5%番茄汁+12%麦芽汁+5%海带汁+ 2%乳清。通过正交试验证明,保加利亚乳杆菌菌体浓度可达到1.0×10^(12) cfu/mL。 The high cell density culture technique of Lactobacillus delbrueckii subsp. Bulgaricus was studied and the effects of cultural condition, such as temperature, inoculation, capacity, initial pH, and media composition, were discussed. The optimal culturing conditions were developed as follows: bases of MRS with addition of 7.5% tomato juice, 12% malt wort, 5% kelp juice and 2% whey. Then high cell density culture was carried out and the cell concentration of 1.0×10^12 cfu/mL for 12hours was obtained under the optimal conditions.
