摘要
探讨西洋参保健饮料二次沉淀的主要组成,筛选出最适澄清剂,确定澄清工艺。结果表明:西洋参保健饮料存放过程中产生的沉淀主要由蛋白质、多酚及糖类成分组成。ZTC1+1Ⅲ型的澄清效果最好,且对其功效成分损失最少。最佳工艺条件为:ZTC1+1Ⅲ型澄清剂添加量3%B+1.5%A、pH5.5、离心分离3000r/min10min,所得西洋参浸提液透光率达到98%以上,制得的保健饮料可长久贮存。
The re-precipitation cause and removing method for American ginseng health protection beverage were studied. The results showed that the precipitates which were generated during the beverage storage consisted of protein, phenolic compounds and carbohydrates. Ⅲ ZTCI+I Clarifier was proved to fit for the clarification of this beverage. The optimal conditions were 3 %B+1.5 %A Ⅲ ZTC1 +1, pH 5.5 and 3 000 r/min 10 rain.The transmittancy of clarified beverage was over 98 % and the beverage could be long stored.
