摘要
2003—2005年间,通过对浙江省各地268个食用菌产品及5个食用菌生产基地灌溉用水、覆土、原辅材料的调查研究,结果表明浙江省食用菌中重金属含量存在超标现象,不同食用菌产品以干香菇、姬松茸中重金属含量超标较多,不同重金属种类以Cd、As含量超标较多,也有少数产品的Hg、Pb含量超标。因此,食用菌中重金属污染应引起高度关注,尤其是食用菌中的Cd。另外,调查研究结果还表明市场上干食用菌(尤其是干香菇、黑木耳)水分含量严重超标,影响品质,干香菇中亚硫酸盐超标率为53.8%,但是食用菌农药残留超标并不严重。通过研究我们提出以下结论:(1)生产中应控制好培养基及其生长环境中的重金属污染,以提高食用菌的质量安全水平;(2)栽培过程中严格按质量安全规程操作时,农药残留是可以控制的。
During the year 2003 to 2005, the investigation research of the quality and safety of edible fungi from Zhejiang province had carried out. The concentrations of heavy metals of irrigation water, cover soil, and raw or auxiliary materials of 5 produce base, and 268 samples of edible fungi were detected. The results showed that the concentrations of heavy metals in some edible fungi of Zhejiang province, such as species of lentinus and agaricus blazei murrill, exceeded the sanitary standards. The Cd and As concentrations of edible fungi exceeded the sanitary more, so did the Hg and Pb in some products. Therefore, paying further attention to the heavy mental pollution of edible fungi is valuable, especially to the Cd in edible fungi. On the other hand, the research results showed that the water content of edible fungi, dry lentinus and auricularia, in the markets of Zhejiang province were too high to keep the quality of the products, the rate of exceed standard of sulphite concentration in edible fungi was 53.8% , but the pesticides residue was slight. The results of research come to the conclusions that: ( 1 ) controlling the pollution of culture medium and the environment was very important for the quality of edible fungi. (2) guided by practice of quality control in culturing edible fungi, the residue of pesticides was able to be controlled.
