摘要
以胶原蛋白初步酶解产物为研究对象,采用pH-Stat监测深度酶解的进程,对比分析不同的酶解条件对深度酶解的影响,确定了复合酶及深度酶解条件。最佳深度酶解条件下酶解3h,SEC-HPLC试验表明:酶解产物平均分子量为386.3u,分子量(80~2500u)含量为91.24%。
It investigated the hydrolysis by complex proteases, using the production of principium hydrolysis as the substrate. It inspected the course of depth-hydrolysis by pH-Stat, effect of the conditions of hydrolysis on depth-hydrolysis by comparing and confirmed the coditions of depth-hydrolysis. After hydrolysising 3h on the optimal depth-hydrolytic conditions, the result of SEC-HPLC as follow: the average molecular weight of 386.3u, the content of peptides(80-2500u) is 91.24%.
