鱼精多肽在抗氧化和抗疲劳方面的作用研究 被引量:9

The anti-fatigue and anti-oxidant effects of protamine hydrolysate

摘要 鱼精多肽(Protamine hydrolysate)是由鱼精蛋白(Protamine)酶解作用后形成的多肽片段,含有较大比例的寡肽和氨基酸,具有很高的营养价值和多种生理功能。研究了其体外清除自由基的能力和体内抗疲劳及抗氧化方面的作用,结果发现鱼精多肽粗粉具有较强的羟自由基清除活性,也能明显提高Wistar大鼠的抗疲劳和抗氧化能力。 Protamine hydrolysate which is hydrolysated polypeptides fragments from protamine comprises a great amount of oligo-peptides and amino acids and possesses high nutritive value and many physiological functions. The scavenging activity on hydroxyl radicals and influences on anti-fatigue and anti-oxidant of protamine hydrolysate were investigated in this paper. The results showed protamine hydrolysate had stronger hydroxyl radical-scavenging in vitro, anti-fatigue and anti-oxidant activities in vivo.
