摘要
以大豆分离蛋白(SPI)和乳清浓缩蛋白(WPC)为原料,应用响应面分析法对影响沸腾床喷涂卵磷脂造粒生产蛋白粉的工艺条件进行了优化。通过实验得到最佳工艺条件为:投料量105kg、热风入口温度170℃、卵磷脂溶液喷雾速度3.5kg/h,在此条件下蛋白粉造粒的收率为96%。
SPI and WPC were taken as raw material that the preparation conditions of protein powder with lecithin using spray granulation were studied by response surface methodology. The optimal conditions were: material quantity105 kg, temperature 170 ℃, spray rate 3.5 kg/h, and under these conditions the yield of protein powder was 96 %.
