赣榆县月饼卫生质量调查分析及对策探讨 被引量:2

摘要 目的:了解我县市场月饼卫生的质量.确保人民群众的食品安全。方法:按照国家《糕点、面包卫生标准》(GB7099—2003)对2000-2006年间赣榆县市场上销售月饼的检验结果进行整理分析。结果:共抽检月饼样品485份,合格415份,合格率为85.57%,有70份产品不合格;微生物指标合格率低于理化指标;不合格原因依次为霉菌、大肠菌群、菌落总数、致病菌、过氧化值、酸价;在不合格情况中一项指标超标的占大多数(82.86%);月饼的合格率在2003年达到最高的91.92%。结论:我县月饼卫生质量总体较好,但仍有待提高。 Objective: To master the moon cake health quality on market in Ganyu county and make out counter- measures to keep the cake salty and healthy. Measures: All cakes collected from 2000 to 2006 years were examined under the health standard of cakes and breads (GB7099-2003). Results: 485 cake sake samples were examined, 415 qualified samples of them, the qualified rate is 85.57 % ; 70 cake samples were disqualified, the qualified rate of cakes by microorganism index is lower than that by microelements index, the causative agents is mould , Bacterium coli, total numbers of colony, pathogenic bacteria, peroxide value, acid number orderly; 82.86% disqualified cake samples by one index of causative agent; the qualified rate of cake in 2003 is the best about 91.92%. Conclusion: the cake health quality is better in Ganyu county by the analysis of cake examined data from 2000 to 2006, there is some countermeasures to booster the quality of cake.
