长江中下游麦区小麦品种品质现状分析 被引量:4

Quality Status of Wheat Cultivars in the Mid-lower Reaches of the Yangtze River

摘要 为了了解长江中下游麦区现有小麦品种的品质现状,以该区近10年来审定推广的58个小麦品种为试材,对其主要品质性状进行了分析。结果表明:1)品种间品质性状的差异较大,其中变异最大的是面团稳定时间,蛋白质含量和湿面筋含量变异较小。2)品质性状的平均值为:蛋白质含量13.3%±1.8%,湿面筋含量29.3%±5.7%,面团稳定时间(4.4±4.1)min。3)不同省份间小麦品种的品质有差异,安徽省小麦品种的蛋白质含量、湿面筋含量和稳定时间要高于湖北、江苏和浙江。4)该区绝大部分品种属中筋类型,扬麦10号和安农92484达到优质强筋二等标准,宁麦9号、扬辐麦2号、扬麦13和扬麦15达到优质弱筋小麦标准。同时,提出了长江中下游麦区小麦品质改良策略、品质区划以及重点推广品种的意见。 In order to investigate the quality status of wheat cultivars released in the last decade in the mid-lower reaches of the Yangtze river, the three quality properties involving protein content, wet gluten content and dough stability time from the 58 wheat varieties were analysed. The results showed as follows. The differences of quality characters among wheat cultivars are obivous. The variation of dough stability time is the largest, and the variation of wet gluten content and protein content is less, with their average value of 4.4 ± 4.1min, 29.3% ± 5.7% and 13.3% ±1.8%, respectively. The average protein content, wet glutein content and dough stability time of wheat cultivars released in Anhui province are higher than those in Hubei, Jiangsu and Zhejiang. Most of wheat cultivars belong to the middle gluten type, and only two wheat cultivars, Yangmai 10 and Annong 92484 come up to the quality standard of strong gluten wheat, while Ningmai 9, Yangfumai 2, Yangmai 13 and Yangmai 15 are weak gluten wheat. The suggestions for quality improvement, quality region classification and popularization of wheat cultivars in the region are also presented in the paper.
