摘要 概述了大豆凝集素的研究情况,总结归纳了大豆凝集素的分子结构、理化特性及其对动物和人类造成的抗营养作用。 Researches on soybean agglutinin was reviewed in the paper. Its molecular structure, physical and chemical characteristics and its anti-nutritional effects to animals and human beings were summarized.
