摘要
由金银花和鲜牛奶为主原料,研制出了集金银花和酸奶的保健功能于一体的新型保健饮料-金银花功能性酸奶。采用正交实验筛选出最优组合,结果表明:金银花汁∶牛奶=0.05∶1,接种量为5%,加糖量为8%,发酵时间7h为最佳的工艺条件,得到的酸奶品质最好。
Take the honeysuckle and fresh milk as the main raw materials, a fermented honeysuckle yoghurt -a new type of healthy care drink wae developed. The optimum conditions of processing technology were obtained through orthogonal test:the ratio of honeysuckle solution to milk 0.05:1, 5 % total inoculation concentration, 8 % cane sugar and 7 hours fermentation.
