综述了影响速冻蔬菜品质的主要因素,如原料、工艺、卫生要求及贮运保障等,旨在为我国速冻蔬菜产业的发展提供参考。
In order to improve the development of the quick- frozen vegetables industry, the main factors influencing the quick- frozen vegetables, qualities such as the raw materials, the technologies, the requirements of hygiene,the guarantee of storing and transportation were revived.
