摘要
淀粉和碘结合生成深蓝色至紫红色的络合物。依据此特性,通过乙醇沉淀白糖中的淀粉,采用0.45μm孔径的过滤膜过滤沉淀,测定样液加碘液反应后的光密度,对照标准样品算出白糖中淀粉含量,建立了白糖中淀粉含量的微孔过滤分析方法。试验表明,方法的回收率在99.78%-101.23%之间,变异系数C·V为1.69%。并用该方法分析了我国不同产区和不同生产工艺(亚法与碳法)白糖样品中的淀粉含量。
Deep blue or purplish red compound will be produced if starch and iodine are combined with each other. According to this characteristic, ethanol is used to precipitate the starch in white sugar and 0.45μm filtering membrane is used to filter and precipitate. Light density of the sample liquid mixed with iodine is determined and then the starch content in white sugar can be calculated compared to the standard sample. In this way, microporous filter analysis method for determining starch content in white sugar is established. Experiments prove that rate of recovery of this method is between 99.78% and 101.23% and coefficient of variation C.V is 1.69%. This method has been used to analyze the starch content in white sugar samples from different regions or production techniques (sulfite and carbonation).
