液相色谱-质谱测定小麦中B类单端孢霉烯族毒素 被引量:9

摘要 单端孢霉烯族毒素包含有200余种化合物,是镰刀菌毒素中非常重要的一类。脱氧雪腐镰刀菌烯醇、雪腐镰刀菌烯醇及其衍生物属于单端孢霉烯族B类,基本结构为四环的倍半萜,以C8位上的羰基为特征。脱氧雪腐镰刀菌烯醇(deoxynivalenol,DON)又称呕吐毒素,化学名称为30α,70α,15-三羟基草镰孢菌-9-烯-8-酮,它对谷物污染率和污染水平居于镰刀菌毒素之首,给人、家畜的健康造成巨大威胁。其最明显的毒性作用是引起呕吐、腹泻、腹痛等症,并延缓生长、降低免疫机能。雪腐镰刀菌烯醇(nivalenol,NIV)化学名称为30α,4β,70α,15-四羟基-12,13-环氧单端孢烯-9-烯-8-酮,其污染率和毒性相对较低,但也广泛存在于农作物中。DON、NIV的结构式见图1。
