萝卜红色素的提取工艺及其稳定性 被引量:12

摘要 以心里美萝卜为材料,对萝卜红色素提取工艺及其稳定性进行了研究。结果表明:在提取时间为3 h、料液比1∶20[质量(g)体积(m l)比]、温度70℃的提取条件下,萝卜红色素提取的产量最高;在大孔树脂AB-8,NKA-9,S-8和NKA-II纯化萝卜红色素时,以AB-8树脂吸附能力最强,吸附速率最快。萝卜红色素热降解遵循一级反应动力学规律,25℃下半衰期为73 d;室内光线照射5 h后萝卜红色素的残存率比室外放置的高54.13个百分点;萝卜红色素明度指数随溶液pH上升而降低,颜色偏离红色而接近蓝绿色。 Extraction technology and stability of red radish pigments from Raphnus sativus cv Xiulimei were studied. The results showed that red radish pigment yield was highest when it was extracted at 1 : 2 rate of solid to solution and at 70 ℃ for 3 hours ;among macroporous resins AB-8, NKA-9, S-8 and NKA-Ⅱ, AB-8 had the strongest sorption and the highest speed of adsorption. The stability of red radish pigments was affected by heat,light and pH. Heat degradation of red rad- ish pigments based on first-order reaction kinetics was observed, half-life of the heat degradation was 73 days at 25 ℃, and residual rate after 5 hours indoors was 54. 13 percentage points higher than that at the same time in sunshine. As pH increased,L value of red radish pigments decreased obviously,the color showed apart from red and close to bluish green.
