摘要
概述了在对淀粉颗粒大小、晶体结构、糊化、回生、玻璃相变等性质研究中应用的高分子物理分析方法;综述了显微技术、差示扫描量热法、X射线衍射法、核磁共振波谱法、凝胶排阻色谱分析技术、布拉班德粘度仪等高分子物理分析方法的特性,并简单分析了每种分析技术在淀粉研究中的具体应用。
The application of polymer physics analytical method in granule size, crystal structure, gelatinization, retrogaduation and glass transition of starch research is summarized. The techniques such as electron microscope (EM), Differential scanning calorimetry(DSC), X-ray diffraction(XRD), Nuclear magnetic resonance (NMR), gel permeation chromatography (GPC)and Brabender amylograpy (BA)are reliable methods for the starch study. The characteristics of every technology and the simple application of them are also introduced in this article, It is pointed out that the combination of these analytical methods will help starch research.
