通过正交实验确定了刺五加黄酮浸提的最佳条件和甜味剂与增稠剂的添加量,其中刺五加浸提的最佳提取条件为料水比1:100、80℃、15min;无糖刺五加饮料的最佳配方为:浸提液80%、木糖醇2.0%、蛋白糖0.035%、甜菊糖 0.003%、CMC-Na0.04%、黄原胶0.04%、柠檬酸0.03%。
Through orthogonal experiments, the optimum conditions for extracting Acantopanax senticosus (Acantopanax senticosus: water = 1 : 100, 80℃ 15min) and the dosages of sweeteners and thickeners were determined. The optimal formula for sugar-free Acantopanax senticosus drink was as follows: Acantopanax senticosus extract 80%, xylitol 2.0%, proteinose 0.035%, stevioside 0.003%, CMC-Na 0.04%, xanthan gum 0.04% and citric acid 0.03%.
