摘要
随着经济的发展和生活的改善,食品安全和健康日益成为人们关注的焦点。食品添加剂中的抗氧化剂,是保证食品安全的重要措施,作者综述了近年国内外天然抗氧化剂对人体退行性疾病预防的研究,重点介绍了类胡萝卜素和多酚黄酮的性质、功能及在食品工业中的应用。
With the economic development and the improvement of living standards, food safety and human health have been becoming the attrative focus. The antioxidants used in food additives are one of the important measures to ensure the food safety. The author summarized the recent researches on preventing human caducity by natural antioxidents both domestically and internationaly. The author also introduced with a large page about the features and functions of caroteoid and flavone, as well as their applications in food industries.
