大白菜气调贮藏研究 被引量:4

摘要 研究了 Snow Spring 大白菜(Brassica pekinesis)(日本品种)在0℃和4℃下,不同 O_2%和 CO_2%配比对减少大白菜贮藏损失的影响和气调贮藏中所发生的生理失调。结果表明:气调贮藏的效果受气体成分、温度和贮藏时间长短的综合影响。在0℃和4℃下,本实验的各种气体成分中贮藏70d 的大白菜的总损失未出现显著差异,但贮藏112d 后,0℃下2%O_2-1%CO_2和4%O_2-1%CO_2的气体成分可以明显降低大白菜的贮藏损耗,前者较后者的效果更好。大白菜的叶脉褐变仅在0℃发生而且不受气体成分的影响。在0℃下贮藏112d 水浸斑出现,其严重程度主要与 CO_2浓度有关,5%CO_2水浸斑最严重。大白菜贮藏前在20℃的呼吸强度平均值为:12.80mL/kg/h,贮藏后各处理的呼吸强度稍有增加,2%O_2-5%CO_2中白菜因腐烂严重,呼吸强度高达24.75mL/kg/h。贮藏前后的乙烯释放量几乎没有差异,贮藏中未见脱帮现象。 Chinese cabbage was held in simulated air and controlled atmos- pheres [O_2%-CO_2%],2-1,2-5,4-1,and 4-5 for 112 days at 0℃ and 4℃.There were some differences in effect of the atmospheres on percent decay,loss in fresh weight and disorders,two disorders appeared.One in all atmospheres was a brownish discoloration of the leaves particularly in the main rib area at 0℃, but not at 4℃.Another one was water socked spots which were transparent and shining in the midribs.They appeared at 0℃ after 112 days and were affec- ted by high CO_2(5%) .Some ethylene accumulated in the chambers,but there was no leaf abscission,although ehtylene accumulation in some cases was rela- ted to high trim loss.The respiration increaced slightly after storage and there was no any change in release of ethylene.
