栅栏技术是食品保藏的根本所在。本文简要介绍了栅栏技术的基本原理,并着重讨论了栅栏技术在软包装低盐化盐渍蔬菜中的应用。
Hurdle technology is the essential events of food preservation. The fundamental principle of the technology is introduced, and the application of the technology in processing of lightly saline and soft package pickle is intensively discussed.
