Along with the rapid development of food industry, food safety has aroused the general concerned with globalization. Present there are kinds of pies in the market, the security of them is very important. Therefore effective management and control on the pies security has great significance for ensuring the pies＇ quality. Manufacturers can administer quality supervision on process, distribution, sale etc by HACCP, then for CPs and no CCPs （Crucial Control Piont） we can apply other management system, such as GMP, ISO9000. So we can reduce the probability of food poisoning and other food source diseases occurring practically and effectively protecting consumer＇s health.
