摘要
白藜芦醇主要存在于葡萄、虎杖、花生等植物中,是一种天然的抗肿瘤、抗心血管疾病、抗突变、抗菌、抗炎、抗氧化、诱导细胞凋亡及雌激素调节物质。文章介绍了近年来对白藜芦醇生物活性和作用机理方面的研究进展,并展望白藜芦醇在食品方面的开发和应用。
Resveratrol has a wide range of biological and pharmacological activities, including anticancer, prevention human from cardiovascular disease, antimutation, antimicrobial, antiinflammation, antioxidant, induction of apoptosis in cells and estrogen modulation and so on. Biological and medical researchers pay great attention to the study on resveratrol. Progress in the research of resveratrol on main biological activities and effective mechanism will be described in this review. Additionally, the exploitation and utilization of resveratrol in food industry were prospected.
