摘要
为了纯种培养专用红心大曲,以适应现代化生产,对山西老陈醋使用的红心大曲中红曲霉进行分离鉴定,从山西老陈醋专用红心大曲中共分离到8株红曲霉,经固体平板培养特征、显微镜镜检个体特征以及生物学特性和生化试验等试验,确定其为红曲霉属(Monascus)中的两个种即红色红曲霉(Monascus ruber)和紫色红曲霉(Monascus purpu-reus),并对其生物学特性及代谢产物进行了研究,为以后红曲霉强化大曲,生产高质量山西老陈醋奠定基础。
This experiment was conducted to isolate and identify Monascus from Super-mature-vinegar Daqu. 8 strains Monascus were isolated from Super-mature-vinegar Daqu with red core. By culturing with solid plate and observing with a microscope and biological and chemical test, these samples were determined them belong to Monascus, Monascus rubber and Monascus purpureus, and studied their biology characteristics.
