摘要
对利用双歧杆菌、保加利亚乳杆菌、嗜热链球菌混合发酵豆粉、乳粉混合液制取双歧酸豆乳进行了研究,确定了最佳工艺参数及底料配比:发酵温度42℃,发酵时间6h,接菌总量3%,菌种比(Bi:Lb:St)为3:2:1,底料配比为豆粉4%,乳粉6%,糖4%。
Presenting the study and research on Bifidobacterium fermentation in soya powder and milk powder mixing-agueous. Bulk starter was prepared by culturing the Bifidobacterium. L. bulgarius and S. thermophilus individuily, then mix them in different proportion, the best formula of the raw material and the precessing facter are determined as follows:Soya powder 4%, milk powder 6%, sugar 4%, the total bacteria load 3%, the proportion of three bacteria (Bi:Lb:St) is 3:2:1, ferment temp. 42 ℃, ferment time 6 hours.
