摘要
目的了解深圳市食品污染卫生状况,为卫生主管行政部门发布食品安全预警系统提供及时、客观的科学依据。方法用传统国家标准法和快速荧光PCR检测方法对抽检的食品进行细菌总数、大肠菌群及常见的一些致病苗等微生物指标检测鉴定。结果从随机抽检的324份食品中,分别检出不合格的大肠菌群18份;金黄色葡萄球菌4份;沙门菌2份;志贺菌2份;致泻性大肠杆菌8份,空肠弯曲菌2份,副溶血性弧菌1份。结论深圳市食品在微生物卫生指标总体是安全的,食品被污染程度较轻;但少数卫生指标不合格,需要引起有关部门的重视,特别是夏季,要加强监管监测,以防出现大规模的食物中毒事件发生。
Objective To understand the contamination status of food with microorganisms in Shenzhcn and provide scientific evidence for making hygienic inspection and food safety alert system. Methods Aerobic bacterial count, E. coil - group and some pathogenic bacteria were detected in randomly selected food samples by standard GB methods and real - time PCR. Results Out of the 324 food samples detected E . coli - group, Staphylococcus aureus 、 Salmonella, Shigella , E . coli , Campylobacter jejuni , Vibrio parahaemolyticus were detected in 18,4,2,2,8,2 and 1 samples, respectively. Conclusion Generally the food in Shenzhen is safe and the contamination is not serious, but hygienic conditions of some food is not safe Thus attention be paid the monitoring work, especially in summer to prevent from occurrence of food poisoning.
