The Prebiotic Effects of Cereal Components and Applications in Functional Foods

摘要 谷物中一些难消化物质在消化道内可作为有益菌生长和发酵的底物,根据这些特点可开发具有益生效应谷物功能性食品,该文就此进行相关综述。 Cereals containing ingredients that cannot be digested by the human host in the upper gastrointestinal tract and can be used as fermentable substrates for the growth of probiotic microorganisms. According of this characteristic, cereals can offer another prebiotic functional foods, The article reviewed some cereal components and their beneficial effects.
