不同施钾水平甘薯直链淀粉含量和糊化特性的基因型差异 被引量:33

摘要 应用粘度速测仪分析了两种钾肥水平下的甘薯淀粉糊化特性。结果表明,甘薯全粉RVA谱表现为B型和C型。崩解值的基因型差异最大,且与P时间呈极显著负相关(r=-0.71**)。淀粉率与最高粘度和崩解值之间有显著(r=0.59*)和极显著(r=0.74**)正相关;直链淀粉含量与崩解值呈极显著正相关(r=0.89**)。施钾对淀粉糊化特性没有显著影响,说明改变淀粉品质的关键因素是基因型,不是钾肥处理。 Starch pasting properties of seven sweetpotato varieties at two levels of potassium fertilizer were analyzed by a rapid visco-analyzer (RVA). RVA pasting curves of sweetpotato flour generally have type B and type C. The difference in the breakdown of the starch among the genotypes was greatest. The breakdown was negatively correlated to peak viscosity( r= - 0.71^** ). Starch content was positively correlated to peak viscosity ( r = 0.59^* ) and the breakdown ( r = 0.74^**). The amylose content was also positively correlated to the breakdown ( r = 0.89 ^** ). Potassium fertilization had little effect on the starch pasting properties. The results showed that a key factor altering starch characteristics of sweetpotato was genotype variation, but not potassium fertilization.
