摘要
肌肽、鹅肌肽是天然存在于脊椎动物体内的一类组氨酸二肽,具有水溶性和较强的而且具有显著的抗氧化和抗衰老等功能,在食品工业中已用作天然的抗氧化剂。对这类二肽内的分布、生物学功能、提取及含量测定做进一步的综述,并讨论其应用价值和发展前景。
Camosine and Anserine are a kind of histidine dipeptide and naturally exist in the skelecton and brain tissues of vertebrates, They are water-soluble and have many characteristics such as strong hot stability, antioxidation, anti-decrepitude and so on, They have been used as natural anti-oxidants in food industry. In this article, we made a summarization about the distribution of these dipeptide in living creature, the biological functions, the extraction and appraisement methods researching. Their applied values in future was discussed.
