摘要
研究了植酸改性淀粉的成膜条件及其可食性膜的性能。植酸改性淀粉可食性膜的最佳成膜条件是:甘油10%,山梨醇5%,羧甲基纤维素钠3%,40-50℃干燥;湿法植酸改性淀粉膜的耐水性和阻湿性优于浸渍法植酸改性淀粉膜和原淀粉膜,浸渍法植酸改性淀粉膜强度有所提高。
This paper studied the film-forming conditions and edible film properties made from phytic acid modified starch. The optimized preparing condition for the edible membranes was: glycerol 10%, sorbitol 5%, CMC-Na 3% and drying at 40-50℃. Water tolerance and moisture resistance of modified starch film made by wet method were higher than native film and the modified starch film made by dipping, but the film intensity of the modified starch made by dipping was improved.
