摘要
酒花质量定义为酒花的新鲜程度;酒花质量链包含从收获到添加入麦汁过程中影响到酒花质量的各个环节。通过研究在酒花质量链中各种条件下对酒花α-酸衰减的影响,分析总结出质量链中的关键环节。
The expression " quality" here is defined as degree of freshness. All steps affecting hop quality in hop quality chain from harvest to its application into the wort are discussed. The quality is followed by studying e-acid content in hops under different conditions, and critical steps are summarized in hop quality chain.
