摘要
以豆乳为原料,添加经过糊化液化的谷物浆料及脱脂牛乳,进行混合调配,通过正交试验,确定出三种因素的最佳配比,其中玉米型豆乳中,脱脂牛乳10%,米浆30%、糖3%;小米型豆乳中,脱脂牛乳10%,米浆6%、糖2.8%。
The bean milk as the raw materials, adding the grain thick liquid material of liquefaction and pasting and degreased milk mix them, though orthogonal design, the best ratio of the three components were decided. In corn-bean milk, the best condition was degreased milk 10%, corn-plasm 30%, sugar 3%; In millet-bean milk, the best condition was degreased milk 10%, corn-plasm 6%, sugar 2.8%.
