Effect of Clenbuterol on the Meat Quality of Pig

摘要 试验选用雅南猪30头,长雅猪33头,总群体共63头,研究了不同剂量克喘素对肉质的影响。结果:在总群体及两品种中处理猪的肉色显著变浅,系水力和pH值下降,有偏向PSE肉的趋势,且剂量越高越明显,长雅猪比雅南猪明显;处理组的眼肌粗蛋白含量明显增加,腰大肌的粗脂肪含量显著减少;眼肌的大理石纹评分、粗脂肪以及干物质含量存在极显著的品种与剂量间的互作效应。 Yanan and 33 crossbred(LandracexYanan) of 50Kg barrows in 5 groups were administered 0, 1, 3,5, 10ppm of Clenbuterol. Results showed that pigs fed clenbuterol had lower pH values, meat color scores and water holding capacity and tend to PSE meat.This tendency of PSE meat was correlated with the dose of Clenbuterol.Pig fed Clenbuterol had more pro- tein content in Longissimus dorsi muscle.
