摘要
研究了水稻种子在不同的发芽条件下维生素C、B_1、B_2、E,谷胱甘肽,β-胡萝卜素等活性物质含量的变化。结果表明:维生素C、谷胱甘肽、维生素B_2的含量随着发芽时间的延长而呈线性增加,在发芽的48h内,维生素B_1的含量是增加的,而后逐渐降低,维生素E的含量逐渐增加至第三天时达到最大值,以后略有下降;样品中未检测出β-胡萝卜素;光照、醋酸钠、葡萄糖可显著提高维生素C的含量,其中醋酸钠的效果最佳;硫酸钠提高谷胱甘肽含量的效果极好。
The changes of active components such as ascorbic acid, thiamine, riboflavin, tocopherol and glutathione during germination of rice seed were studied in this paper. The results are shown as follows; The increases in contents of ascorbic acid,glutathione and riboflavin took place linearly with germinating time (Thiamine content increased within the first 48 hrs and thereafter reduced gradually: Tocopherol content in rice reached a peak value on the third day during germination, then decreased slightly ;β-carotene was not found in germinated rice ;Light, aqueous CH3COONa, aqueous glucose etc. as mediums or factors could promote the content of ascorbic acid and aqueous CH3COONa had the most obvious effect on promoting ascorbic acid content; Aqueous Na2SO4 was very effective to promote the content of glutathione.
