功能性白酒的研究

摘要 通过单因素试验、复合因素试验、扩大试验、稳定性试验、感官评定、功能性成分的检测和功能评价,研制了一种新型的具有免疫调节功能的功能白酒,其配方为(mg/100mL38%(v/v)白酒):牛磺酸200,γ-氨基丁酸100,1-茶氨酸200,谷胱甘肽50,肌醇30和烟酰胺8;研究结果表明我们研制的功能性白酒具有功能成分的种类和含量确切,基本不影响通常白酒应有的风味,无色、无药味和功能作用明确的特点。具备了按规定程序申报保健食品的条件。 The formula of a new functional Chinese spirit and its properties were studied in detail by a series of experiments. The results show that the content of taurine, γ-GABA, 1-theanine, glutathione, inositol and nicotinamide is 200, 100,200, 50, 30 and 8 mg/ 100mL respectively, in ethyl alcohol of 38% (v/v) .The developed functional spirit is good in both quality and function.
