摘要
利用盆栽试验初步研究了缺钾冷浆型水田施用钾肥对水稻稻米蛋白质组分和氨基酸含量的影响。结果表明,施钾不仅增产,而且可提高稻米蛋白氮占全氮的比例,降低非蛋白氮含量;在一定程度上提高稻米中清蛋白、球蛋白、谷蛋白等营养品质较高的蛋白质组分和蛋白质中赖氨酸、苏氨酸、精氨酸等必需氨基酸含量,从而在一定程度上改善了稻米的营养品质、食味品质和贮藏品质。
The results showed that applying potash can increase the grain yield and protein-N/total-N ratio and decrease the content of nonprotein-N. potash also can decrease content of albumin, globulin and glotians of grain and the percentage of essential amino acid such as lysine, threonine, argmine et al. Therefore applying potash improves the quality of grain.
