摘要
以5种沙梨为样品,用常规分析方法进行营养成分分析,原子吸收法选择测定了其中7种矿质元素含量,HPLC ACCQ.Tag法进行氨基酸的测定.结果表明:总糖的范围在5.00%~7.49%,蛋白质含量在0.11%~0.22%,Vc含量4.4~7.2 mg/100 g,总酸0.14%~0.34%;常量元素含量较高的是:钾(丰水)239.1 mg/100 g,镁(翠冠)21.88 mg/100 g;微量元素含量较高的是:Fe(清香)2.75 mg/100 g,Zn(翠冠)11.5 mg/100 g;含有16~17种氨基酸,其中有6~7种必需氨基酸.
Nutrient ingredient of five sand pears was analzed by normal analysis method and 7 mineral components was tested by atomic absorption spectrometry,amino acid content was determined by HPLC ACCQ.Tag method,other analysis was carried out according National standard(s).Experimental results shown that the range of water content is 86.2~90.4 %;total sugar content,5.00%~7.49%;protein,0.11~0.22%; Vc,4.4~7.2 (mg/100 g) and total acid content,0.14%~0.34%.With respect to the macro-element content,Kalium (Fengshui pear,239.1 mg/100 g) ranks first,Magnesium (cuiguan pear,21.88 mg/100 g) ranks second.As to the trace elements,zinc (11.5 mg/100 g,Cuiguan pear),iron (2.75 mg/100 g,Qingxiang pear).16~17 kind of amino acids were found in the samples.Among them,6~7 kinds were essential amino acids.
