摘要
淮安长鱼菜是流传在江苏淮安地区,以长鱼为主要原料,通过不同的选择搭配和烹饪方法制成的若干菜品,淮安长鱼菜历史悠久、技艺精湛,是淮扬菜中的一支奇葩。
Huaian mud eel dishes are quite popular in the Huaian Region of Jiangsu Province. They are prepared mainly with mud eel as the cooking material, but cooking methods are various and the complementary ingredients are differently chosen. Huaian mud eel dishes have a long history. With the excellent cooking techniques and specific flavor, they are really a wonderful work of Huaiyang Cuisine.
