摘要
研究从红树秋茄叶中提取所得色素的理化性质。结果表明,红树秋茄色素是一种水溶性色素,在pH≤5和pH≥9的不同酸度范围内分别呈稳定的黄色和红色,该色素对光、热具有良好的稳定性,耐氧化及耐还原性能强,与常用食品添加剂有好的混用性。
The physicochemical properties of pigment extracted from mangrove kenaelia candel were studied.The results showed that the pigment is soluble in water and it is yellow and red in pH≤5 and pH≥9 respectively, its stability is good to light, heat, oxidizer, reducer and some food additive in common use.
