摘要
乙醇(10%V/V)对内切葡聚糖酶存在抑制作用,一定浓度的BRIJ35、Tween80、Tween20可以部分或基本解除乙醇的抑制,而SDS不能解除乙醇对酶的抑制。从荧光光谱可见,乙醇使酶分子的生色团埋藏于分子内部,两亲分子则反之。圆二色谱揭示了酶分子α螺旋结构为活性所必需。两亲分子结构不同,解除乙醇对酶抑制的能力也不同。
The effect of some commercial amphopathics on the activity and structure of endoglucanase (Cx) in the presence of ethanol was investigated. BRIJ 35, Tween 80, and Tween 20 partially or fully released the inhibition of ethanol to the enzyme, but SDS didn't.As shown by fluorescence spectra, ethanol made the chromophores in the enzyme buried in the interior of enzyme but action of amphopathics was the opposite. The α-helix structure is important for the enzyme by analysing data shown in CD spectra. Different amphopathics have different effect for Cx against the inhibition of ethanol.
