摘要
仙桃红是从成熟的仙人掌（Opuntiadillenii（Ker．－Gawl．）Haw．）果中，用乙醇溶液浸提而获得的一种水溶性食用天然红色素。该色素在pH3－8的介质中呈艳丽的紫红色，经初步毒性试验，证明安全无毒。
The red pigment whicli was extracted from the ripe fruits of opuntia dillenii is a kind of water-soluble and natural eatable pigment. It can be obtaihed by Soaking the fruits in alcohol and it shows a bright purple in pH3-8.The red pigment has proved nonpoisonous by acute toxicological test.
