摘要
黑米是祖国古老的食品文化遗产,在欧美各国流行的黑色食品浪潮中,国内黑米功能食品也蓬勃发展起来。本文就黑米的食疗功能、营养价值及开发利用新途径作一综述。
The black rice is an ancient cultural heritage of Chinese food. In popular wave of black food of Euorpean and American, Chinese black rice as functional food is also developing vigorously. This paper is a summary of food therapy function, nutrition value of black rice and its new way for development and utilization.
