摘要
对 2个保护地南瓜新品种果实的总糖、淀粉、果胶、粗纤维、粗蛋白、矿物质 (Ca、P、Mg、Zn)和维生素 (β -胡萝卜素和VC)含量进行了测定。结果表明 :板栗红的 β -胡萝卜素含量达 3 5 .2 5mg/10 0g ,而迷你南瓜中果胶含量达 12 .49%。
The contents of total sugar,starch,pectin,crude fibre,crude protein,minerals(calcium,phosphorus,zinc) and Vitamins(β-carotene) of pumpkin fruit were studied. The results showed the β-carotene content of Banlihong pumpkin was 35.25 mg/100?g,and the starchcontent of mini pumpkin was 12.49%.
