摘要
草莓果实经 - 5 0和 - 10 0kV·m-1高压静电场处理后 ,呼吸速率受到明显抑制 ,果实中可溶性固形物含量较高 ,多聚半乳糖醛酸酶和羧甲基纤维素酶活性降低 。
Strawberry was used as experimental material to explore the effects of -50 and -100 kV·m -1 high-voltage static electric field (HVEF) on the respiration rate, firmness, soluble solids content and polygalacturonase activity and carboxymethylcellulase activity. After HVEF treatment, the respiration rate was decreased obviously and the soluble solids content in fruit kept in a high level. The activity of polygalacturonase and carboxymethylcellulase was declined, while the fruit firmness declined slowly.
