Enzyme based starch modification has attracted much attention form recent years due to formation various functional derivatives with novel processing and functional properties such as resistant to digestion,thermosrev...Enzyme based starch modification has attracted much attention form recent years due to formation various functional derivatives with novel processing and functional properties such as resistant to digestion,thermosreversible gel formation,etc.It has emerges as a promising method due to their high specificity,safety,and eco-friendly nature.Starch-modifying enzymes hydrolyse or form glycosidic bonds causing alteration in the amylose/amylopectin ratio,molecular weight and distribution of branch chain-length that has reduced limitation possessed by NSs i.e.,low water-holding capacity,insolubility,syneresis retrogradation,etc.The review delves into the key enzymes used for modifying starch,affecting the structural and functional properties of starch.These alteration in starch properties provide guidelines in designing a new starch-based products with desired structure and properties for the food industry.展开更多
Antimicrobial resistance is becoming a serious public health problem that needs to be eradicated.In this context,the use of natural sources with antimicrobial properties is proposed as an alternative to conventional s...Antimicrobial resistance is becoming a serious public health problem that needs to be eradicated.In this context,the use of natural sources with antimicrobial properties is proposed as an alternative to conventional synthetic antimicrobials,thus avoiding their adverse effects.To improve the controlled and targeted release of these compounds,it is essential to incorporate them into matrices,which in turn improves their stability and bioac-tivity.Starch-based matrices as carriers of antimicrobial compounds have shown great potential in many ap-plications,especially in active packaging for food safety.This review examines recent advances in the use of these matrices,highlighting natural sources with antimicrobial properties and starch types such as corn,cassava,and modified starch,the latter being particularly relevant for its improved solubility properties and functionality.Starch plays a crucial role in improving the stability and solubility of antimicrobial compounds,and the controlled release depends on the structure of the starch and on the properties of the environment.In food packaging,starch-based films loaded with antimicrobials are effective in inhibiting bacterial growth and extending shelf life.The applications of the bioactive compounds combined with starch matrices,such as plant extracts and essential oils,are also analyzed,providing a sustainable solution to antimicrobial resistance.This analysis highlights the advantages and potential of starch matrices in the development of antimicrobial controlled release systems.展开更多
