This study investigated the suppressive effects of Armoracia rusticana(AR)and its three main glucosinolates on both free and bound heterocyclic amines(HAs),along with their mechanisms of free radical quenching using d...This study investigated the suppressive effects of Armoracia rusticana(AR)and its three main glucosinolates on both free and bound heterocyclic amines(HAs),along with their mechanisms of free radical quenching using density functional theory.Fish patties were supplemented with varying concentrations of AR(0.5%‒1.5%)and glucosinolates(0.005%‒0.015%),showing a dose-dependent inhibition of HAs and concurrent elimination of free radicals and HAs intermediates.Glucobrassicin demonstrated the highest reactivity,which was verified by frontier orbit analysis and conceptual density functional parameters,consistent with experimental findings.Furthermore,the O-H bond connected to the sulfur atom of glucobrassicin possessed the smallest bond dissociation enthalpy(BDE)value,which indicated that this particular hydrogen atom is most susceptible to react with free radicals.Overall,AR and its glucosinolates,especially glucobrassicin,show promise as natural additives for improving food safety and quality.展开更多
As a specific spoilage organism of seafood under refrigerated temperature conditions,Shewanella spp.tend to form biofilms that exacerbate the occurrence of seafood spoilage.Biofilm-promoting factor A(BpfA)has been rep...As a specific spoilage organism of seafood under refrigerated temperature conditions,Shewanella spp.tend to form biofilms that exacerbate the occurrence of seafood spoilage.Biofilm-promoting factor A(BpfA)has been reported to promote the adhesion and biofilm formation of Shewanella spp.,but its role in adhesion and biofilm formation of S.putrefaciens under cold stress needs to be further investigated.To better comprehend the effect of BpfA on adhesion and biofilm formation of S.putrefaciens under cold stress(4℃),bacterial adhesion and biofilm phenotype of S.putrefaciens CN32 WT andΔbpfA at 4℃were analyzed and performed transcriptomics.The results showed that the deletion of bpfA had almost no effect on the growth of S.putrefaciens CN32 at 4℃,but weakened the unicellular adhesion capacity of S.putrefaciens CN32 and destabilized the stability of the multicellular adhesion layer.In addition,the biomass of the mature biofilm formed byΔbpfA was merely around 50%of that observed in the mature biofilm of S.putrefaciens CN32 WT,the average thickness and volume of the biofilm decreased by 18%and 27%,respectively,and the composition of the biofilm changed.Transcriptome analysis demonstrated that the deletion of bpfA led to differential expression of genes involved in metabolic pathways such as bacterial chemotaxis,two-component system,tyrosine metabolism,drug metabolism-other enzymes and biofilm formation-Vibrio cholerae,which in turn influenced bacterial adhesion and biofilm formation.Those results advance our acknowledgment of the character of BpfA on adhesion and biofilm formation of S.putrefaciens CN32,which contributes to understanding bacterial adhesion and the control of biofilm formation.展开更多
Crassostrea gigas has good taste and high nutritional value;however,there are few assessments of comprehensive and panoramic analyses of the nutritional quality of the northern oyster.To study the nutritional characte...Crassostrea gigas has good taste and high nutritional value;however,there are few assessments of comprehensive and panoramic analyses of the nutritional quality of the northern oyster.To study the nutritional characteristics of C.gigas from different sources(ploidy,region,size,and culture mode),C.gigas from various ploidy(diploid and triploid),regions(Rushan,Off-site fattening,and Rongcheng),sizes(small,medium,and large)and culture modes(nearshore and offshore)were selected for comparative analyses.The nutritional components(moisture,protein,fat,and mineral),flavor substances(taste amino acids,nucleotides,and succinic acid),and functional indices(eicosapentaenoic acid(EPA),docosahexaenoic acid(DHA),and taurine)of C.gigas were determined.Principal component analysis(PCA)was used to comprehensively evaluate the oysters and investigate the variations in nutritional quality.The PCA results indicate that protein,essential fatty acids,selenium,zinc,taste amino acids,taurine,EPA,and DHA were core components contributing to 82.25%of the cumulative variance,providing a more comprehensive reflection of the nutrient composition of C.gigas.The extensive quality rankings for the C.gigas were as follows:diploid>triploid,Rushan>fattening>Rongcheng,medium>large>small,and offshore>nearshore.The score rank revealed that diploid oysters of medium-size from Rushan demonstrated superior nutritional quality compared to other tested samples.This is the first comprehensive and systematic investigation of C.gigas in northern China to reveal the feature of nutrients,flavor,and functional components.The study provided data support for the culture,consumption,processing,research,and nutritional quality improvement of oyster industry.展开更多
